Grilled Chicken with White Peach Salsa

Here’s What You’ll Need …

  • 1 1⁄2 lb skinless, boneless chicken breasts
  • 1 Tbsp olive oil, plus more for grilling
  • 1⁄2 tsp chili powder
  • 1 tsp minced fresh thyme
  • Salt and freshly ground pepper
  • 4 white peaches, peeled (optional), pitted, and coarsely chopped
  • 2 Tbsp fresh lime juice
  • 3 Tbsp finely chopped red onion

Here’s What You’ll Do …

  1. Put the chicken in a bowl.  Add the oil, chili powder, thyme, 1 ⁄2 tsp salt, and 1⁄2 tsp pepper and turn the chicken to coat it well.
  2. Prepare a grill for direct-heat cooking over medium-high heat.  Oil the grill rack.
  3. Grill the chicken until it has golden brown grill marks, about 2 minutes per side.
  4. Cover the grill and cook just until chicken is opaque throughout, 2–3 minutes.
  5. Transfer to a platter, tent with foil, and let rest for 5 minutes.
  6. To make the salsa, stir the peaches, lime juice, and onion together in a bowl.
  7. Slice the chicken crosswise and arrange on warmed plates.
  8. Spoon the salsa on top of the chicken, and serve.
