Veggie & Quinoa Breakfast Bowl

Serves: 1

Here’s What You’ll Need …

  • 1/2 cup of quinoa, rinsed
  • 1/2 cup of milk
  • 1/2 cup of water
  • Broccoli, cut into florets
  • Mushrooms, sliced
  • Cheddar cheese, grated
  • Sea salt & pepper to taste
  • 1-2 cage free eggs

Here’s What You’ll Do …

  1. Heat a little bit of olive oil in a pan over medium high.
  2. Add broccoli and mushrooms and stir-fry until cooked (around 5 minutes).
  3. Remove from heat and set aside.
  4. Combine milk, water and quinoa in a large saucepan … bring to a boil, then reduce heat to low.
  5. Simmer, stirring regularly until most of the liquid has been absorbed.
  6. Add vegetables, cheese, sea salt & pepper to the pot of quinoa and stir to combine.
  7. Cover and set aside.
  8. Fry egg(s) sunny side up, over easy or however you like your eggs … I prefer sunny side up, over easy or soft-boiled so that the yoke can run over the rest of the bowl!
  9. Transfer the quinoa and veggies to a bowl, top with the egg(s) and enjoy!
